First Course Gargalliou of Young summer squash, Heirloom tomatoes, Black miso and tomato dashi. Pairing: Victorine de Chasternay Brut Rose
Second Course: House-made Truffled Cornbread and honey butter. Pairing: African Flower cocktail made with Bourbon, Crème de Cacao, CioCiaro Amaro & Orange Bitters.
Third Course Roasted Catalan Prawn with saffron poached fingerling potatoes and chorizo. Pairing: Domaine Gueneau Sancerre La Guiberte.
Fourth Course: Grilled Petit NY Steak with slowcooked wax beans, caramelized onion and mushroom jam. Pairing: Château Boutisse.
Dessert: Burnt sugar chocolate mousse with pistachio shortbread, spearmint crema, and honeycomb toffee. Pairing: Athol Brose – Scotch, Honey Syrup, Layered Cream with Freshly Grated Nutmeg.
